An Open Letter to Barack   Leave a comment

Hey…OK first things first. Congratulations for being the first black american president and “driving” the Bushes, Cheneys, Rumsfelds and all those Damned War Generals to the garbage dump. No. Really! Thanks!!

It had to be done and for it to be done by a brother just adds a twinge of poetic justice that makes me giddy at times. Sometimes I will sit and think of it..these high powered white dude, global power brokers siting around the cigar and whiskey parlor rooms “steaming piss”.. pissed off talking about how they got jumped by the negro!!

To me it is laughable and hilarious!! It makes me think of all kinds of bush-isms. I can just imagine the talk George W has had with his daddy and mommy.. HAHAHAHA!!  The “Bush dinner” with his mommy and pops after leaving the white house wherein George W is all mopey and shit and is being consoled by Barbara and Big Daddy constantly reminding him ..”we are so proud of you”..its not your fault….we ARE NOT disappointed in you!!! LMAO.

Here are some other thoughts; all those W stickers…don’t see as many as we used to see on the road.  On the other end of the spectrum I also think of the brothas sittin ’round in the man cave talking big time shit about how a half baked, soup bone, Hyde park uppity ass negro from Chicago shut down the biggest war machine EVER KNOWN TO MAN!

The Al Sharptons and Jessie Jacksons of the world got to be thinking.. he ain’t all black but I don’t give a shit, ‘He got THE job’. He sent the white, cracker ass crackers packin’ from the white house, Ha! He got the white house staff cooking fried chicken, collard greens and hot sauce on the table. He got his wife with her big ol ass right beside him and she is just as  smart and uppity as he is. Hell she probably ain’t black either.  Yes Ma’am..finally some spice up in here.. ’bout damn time, ’bout damn time.

There is an endless stream of black consciousness here! And hell I ain’t even black !! I can see the brothas smokin weed on the weekends and talking big time shit and laughin their collective asses off!! I MEAN LAUGHING their asses off. The kind where you are talking with your friends laughing so hard you cry and make a fool out of yourself.

Carrying on… the white house grocery list has changed!! Lets talk about what could be dropped and what could be added..using all the stereotypes available..
Hennesey/Woodford Reserve
Ole English 800’s in 40 ounce bottle/Bud Light (probably not, but I couldn’t resist)
Collard Greens/Green Beans
Jet magazine/Southern Living
watermelon/passion fruit
white bread/jewish swirled rye
chocolate milk/white milk 2%
chicken breast/lamb chops
plain old yellow cheese/$20 goat cheese
OJ/Ocai pomegranite(sp) juice
tabasco/texas pete
kibbels and bits/gourmet dog food
tortilla chips/cape code white cheddar popcorn
luzianne tea bags/earl grey tea bags
white trash bags/black trash bags < a lot of symbology there
the list is endless and pathetic!! Ha

and finally in closing I cant resist the change in playlists so here we go

beyonce replacing tony bennett
darius rucker replacing willie nelson
jennifer lopez replacing taylor swift
yoyo ma replacing wagner

1. I am white and don’t understand anything about racial relations and stereotypes
2. I am a smalltown white boy who dont know shit about politics and really dont give a rat’s ass.
3. I cant deny being an amateur racist but I can deny being a hypocrite!
4. I pray for forgiveness everynight at bedtime but that don’t mean I am covered on this one! Ha!

Roasted Fingerling Potatoes, Mushrooms, Red Onions and Garlic   Leave a comment

One more..

I know my roasting days are nearing an end because it’s getting hot outside, so I’ve been busily roasting as much as possible while it’s still cool in the evenings. This recipe contains all of my very favorite ingredients so you can imagine how much I loved this side dish. The potatoes were crisp on the outside and creamy inside, the onions and garlic were really sweet and the mushrooms were just delicious. I will definitely be making this dish over and over again.

Roasted Fingerling Potatoes, Mushrooms, Red Onions and Garlic:
Recipe and photos by For the Love of Cooking

  • 10-12 fingerling potatoes, sliced in half lengthwise
  • 10 white button or cremini mushrooms, sliced in half
  • 1/2 red onion, sliced
  • 4 cloves of garlic (keep the skins on while roasting)
  • 1-2 tbsp of olive oil
  • Sea salt and fresh cracked pepper
  • Fresh chopped parsley for garnish

Preheat the oven to 400 degrees. Coat a baking sheet with tin foil (for easier clean up) and coat very well with olive oil cooking spray. Slice potatoes, onions and mushrooms then place them along with the garlic (leave the skins on so they don’t burn while roasting) on the baking sheet. Drizzle the olive oil on top of the veggies along with the sea salt and pepper to taste, toss to coat evenly.

Roast in the oven for 15 minutes then toss with a spatula. Roast for an additional 10 – 15 minutes or until the potatoes are golden brown and tender. Remove from heat and carefully remove the skins from the garlic cloves then slice. Add the garlic slices along with chopped parsley to the potatoes and serve. Enjoy.

Sweet Corn with Cilantro Lime Butter and Cotija Cheese   Leave a comment

I’ve been wanting to make corn with cilantro, lime and cotija cheese for a long time. I bought some sweet corn and decided to finally give it a try. I loved the flavor of the cilantro lime butter on the sweet corn and the salty cotija cheese on top. We all, guests included, loved this corn on the cob. Baking the corn was very simple with little clean up – I love that. It went really well with the Flank Steak with Chimichurri Sauce.

Cilantro Lime Butter:
Recipe and photos by For the Love of Cooking

  • 1/2 stick unsalted butter, softened
  • 1/4 cup chopped cilantro leaves, chopped finely
  • 1/2 a lime, zested and juiced
  • Sea salt, to taste
  • 1/4 tsp cayenne pepper
  • 4 ears of corn, schucked and cleaned
  • Cotija cheese, grated

In a small bowl, mix the butter, chopped cilantro, lime juice, lime zest, sea salt and cayenne pepper thoroughly.

Preheat oven to 400ºF. Coat each ear of corn with the the cilantro lime butter and wrap individually in foil. Roast for about 20-25 minutes. Sprinkle cotija cheese on top and serve.

The Ten Biggest Problems Facing African-Americans Today   Leave a comment

By Lee McGrath

The Ten Biggest Problems Facing African-Americans Today. Ranked in order of Despair Caused.

1. Lack of opportunity and safety. There has been a loss of industrial jobs and a failure to control crime in northern cities by liberal mayors for most of the last 40 years.

2. Breakdown of the family. Until recently, welfare was a constitutional right (Goldberg v. Kelly) that makes government dependency more attractive than husbands. Illegitimacy increased from 23.6% in 1963 to nearly 70% of all black children today. This persistent problem was predicted by the Moynihan and Glazier more than 30 years ago and by FDR’s Secretary of Labor Francis Perkins who insisted that aid not go to unwed mothers. Policy makers and politicians did not listen until 1996. Some still don’t see how welfare reduces the value of black men.

3. Black anti-intellectualism. Accusations of “acting white” in the classroom, as detailed by John McWhorter, undermine education as a vehicle for advancement. Instead, black leaders expend enormous resources to advance affirmative action at a small number of elite universities, unmindful of the pernicious effects it has had on talented young blacks.

4. Failure of urban K-12 schools. Teachers unions and the education establishment have been more interested in pay-raises and grants than student achievement, testing, and competition from Catholic schools. Not to mention the costs of replacing the more effective Basic Instruction with the Self-Esteem pedagogy.

The failure of urban schools is not attributable to a lack of funding. There has been a 300% real increase in per pupil spending since 1970. This increase has been only modestly offset by increases in special need students from 8.3% to 11.8% of the student body – of which the percentage of seriously challenged children actually declined. The limits of throwing money at the problem were seen in Kansas City’s $1.2 billion debacle.

5. High incarceration rate of black men. The Democratic Party is a co-conspirator in the “War on Drugs” to garner suburban votes. Instead it should fight to decriminalize drugs and reduce the jail time served by family members of its most loyal voters.

6. Reduced respect for human life. Black women have nearly 30% of the all abortions, resulting in the death of 350,000 fetuses a year or one every 90 seconds. Beyond the tragic loss of life itself, this much death reduces the civility with which people treat each other.

7. Licensing requirements. Government imposes barriers to labor-intensive entrepreneurial opportunities. (Hair braiding/cosmetology degrees and taxi medallions). Licenses are a de-facto re-creation of Jim Crow laws. They are passed in the name of health and safety but serve to protect, in reality, current cartel providers and union jobs. Moreover, continual increases in the minimum wage make it more attractive to invest in capital equipment than hire unskilled black workers in entry level training positions.

8. Victimolgy. The speeches and ideologies of Jesse Jackson, Al Sharpton and leaders in the reparation movement undermine the initiative of many African Americans. Moreover, there is a lack of honest debate among black leaders because of the fear of being called an “Uncle Tom” for not supporting the grievance agenda.

9. Radical relativism. Black leaders and liberal academics do not criticize even the most obscene behavior of people like Puff Daddy, OJ Simpson, and Dennis Rodman. They fail to see the effects on youth of Hip-Hop culture. Instead they applaud the legitimacy it receives from people like Harvard University Professor Dr. Cornel West. (Larry Summers was right).

10. Excessive race-consciousness. The Left is insincere in acknowledging the advancement in race relations since the early 1960’s. 75% of blacks have joined the middle class. If they lived in an independent country, they would be citizens of the 10th richest nation in the world. Race matters but not very much. Race-consciousness diminishes the importance of addressing the more important issues listed above.
